Imagine, for a moment, that a frosty jalapeño paloma on the rocks was the dastardly villain in an episode of “Scooby Doo, Where Are You!” Or, so we suspect. “Alright, you spicy, zesty, refreshing son of a b*tch. Let’s see who you really are.” Fred swiftly rips that mask right off, revealing that this is, in fact, not a jalapeño paloma at all, but rather Rezabal’s txakoli rosé. Jinkies. It’s uncanny how much this glorious salmon-colored liquid reeks of freshly-muddled green pepper, pulverized at the bottom of a cocktail shaker and floating in a generous squeeze of pulpy grapefruit and crushed ice. But to balance all of that capsicum-whiffed bitterness, there’s this swirl of artificial strawberry hard candy that saves the day. In fact, it’s really more like those pink bon bons with soft centers and the crinkly wrapper that looks like an actual strawberry. You know, the ones you see served in fragile crystal dishes at every east coast diner and grandma’s house ever. With a barely-there spritz of faint bubbles and some heirloom tomato-like savoriness, it makes for one of the most gluggable summertime wines I’ve had the pleasure of sipping - and thankfully, that’s not something you need Mystery Incorporated to figure out for you. Zoinks.
Pair With:
A plate of lime-splattered street tacos on puffy corn tortillas accompanied by a sizzling hot day near a body of water - be it pool, beach, lake, or your bathtub filled with cold tap as you sit there frowning in your bathing suit, announcing to nobody in particular, “well, this works.”
