When you first put a glass of Bichi’s frizzy rosé straight to the schnoz, there’s this bright, vinegar-y olive twang that later gives way to nutty amaretti cookies crumbled on top of fresh strawberry preserves. I’m absolutely not recommending you take this information and dump the brine from jarred Castelvetranos all over some dessert (in fact, please don’t), but golly, is this wine tasty. It’s sweet but not cloyingly so, a little medicinal but at the same time isn’t like swilling cherry cough syrup, and has a lot of honey graham cracker vibes to balance out the fruit. This bottle of bubbles made from completely unidentified grapes is an odd bird, but truth be told, those are the most fun. Am I wrong? Don’t answer that.

Call me crazy for pairing something sugary with wine that isn’t, but there are no rules, so I’d do this bubbly with some strawberries dunked in Nutella. See what happens.
