Borachio 2020 Pash Rash
Tasting Notes
Pash Rash is the G.O.A.T. It’s the first bubbly bottle of natural wine that lit my spark within, and it’s why I’ll always use it to introduce friends to this weird, wonderful, wild yeast-filled alternate dimension. It’s also why I’ll hoard bottles of it every year, because this salmon-colored pét-nat sells out extremely fast. And with good reason - this fizzy rosé is basically Country Time pink lemonade and grapefruit mimosas playing footsie under the table (get a room). It’s a little brioche-y and a lot refreshing. It’s everything you love about sticky summertime, and yet, is just as comforting with a slab of baked brie and store-bought crescent rolls in the middle of February. And those little Koalas on that turquoise label are pretty dang cute. Don’t pretend you’re not gonna throw some freshly-cut flowers in the bottle post-guzzle.
Pair With:
A crusty baguette, maybe stuffed with prosciutto di San Daniele, soppressata, buffalo mozzarella, a pile of arugula, and a little drizzle of olive oil. Chase it with kettle chips or Funyuns, preferably consumed with pals on a boat, if you can make it happen. Misted saltwater adds joie de vivre, and does great things to hair.
Funk-o-Meter
There’s a reasonable amount of cloudy pizzazz here, but it behaves extremely well with this babe’s puckering tartness. We’re talking please-and-thank-yous, no-time-outs, rewarded-with-Baskin-Robbins-afterwards behavior.
