You know that feeling after eating something spicy when you immediately reach for sweetness in an attempt to kick all that heat to the curb? It never really works to calm the spice per se, but it gives both dueling flavors the limelight on your tongue. Teamwork! That’s Bichi’s La Santa in a nutshell. This light, hazy, plum-y red is just like shoving a lush strawberry popsicle into your mouth after accidentally crunching on a whole peppercorn - light, juicy, and tart with a subtle kick. And while we’re on the topic of nutshells, there’s also a toasted almond thing going on that makes each sip taste like a rinse of granola-topped fruit crisp. Listerine, take note. You could totally have this with food, or just continually top your glass throughout the night in front of a TV. Your choice.

Someone wise once said, “What grows together, goes together.” So you should 100% have this Mexican wine with Mexican food - maybe a goblet of citrusy guacamole with tortilla chips, shredded carnitas or fried oyster mushroom tacos with fresh jalapeño slices and pico de gallo, and finish it off with some churros - crispy, cinnamon-y dough would freaking rock with this wine’s nuttiness. Or, uncork it for a charcuterie and Netflix session.

Much like the Cha Cha Slide, it absolutely gets funky at first. I mean, DJ Casper flat-out tells you that it’s going to be. But then, you get used to it quickly. Very quickly. Suspiciously quickly.
