Ah, Pizza Sauce - a.k.a. the sauce to slurp with the ‘za. This red blend takes the guesswork out of food-pairing, and I adore it for that. But don’t mistake it as an excuse to engage in total cheese-laced anarchy. After all, we don’t live in that chaotic Mary Kate & Ashley sleepover movie singalong where there are no rules, no parental supervision, and no regard to the human person whose harvested eyeballs are about to be tossed on a cold delivery pizza and consumed by prepubescent children with terrible rhythm. If you don’t know what I’m talking about, watch it here - but be warned, it’s three minutes of your life you’ll never ever get back. My point is, in this dimension of unlimited topping possibilities, you’ll want to steer clear of white or olive-oiled pies and stick to tomato-based while drinking this crimson little number. Why? It’s plummy and peppery with a fennel-y liquorice and blackberry compote bite that clings to crushed san marzanos like an ex who won’t drop off that last box of stuff because then that means it’s definitely over. And while a huge gulp neutralizes the heat from things like spicy pepperoni cups, Calabrian chiles, and earthy dried oregano like a damn champion, it has a bit of its own kick at the same time. Pizza Sauce, someone named you well.

Duh. P-i-z-z-a, but lean toward red-sauced - and while you’re at it, also lean toward making sure that it’s absolutely not topped with “whipped cream pouring like waterfalls!”
