Tasting Notes

Wine, or Ditto from Pokémon? Jury’s out. This bottle of bub is on some Houdini-level magic. How it can shapeshift with general ease from mushroom-y umami Maggi-like saltiness to a cool, crisp, action cartoon-style “POW!” of strawberry-rhubarb while a gulp is still sloshing around in your mouth is pretty dope. It’s honestly what balsamic would sip like if it were an effervescent alcoholic beverage instead of common salad dressing/the trusty-but-ultimately-underappreciated Robin to fresh mozzarella’s Batman. If you need me, I’ll be here MacGyvering a bottle-shaped signal to blast into the night sky in hopes that more Pet Natch will miraculously arrive at my doorstep. That was a Batman joke.

Pair With:

Smoky lox and cream cheese on a sesame bagel, or Indonesian-style fried rice slick with kecap manis and river rapids of runny egg yolk.

Funk-o-Meter

All aboard a wild ride dotted with drops of vinegar.
