Salutations, greatest sushi wine ever made. Nice to meet you. This dry sparkling riesling pairs scarily well with raw fish while simultaneously slicing through any tempura and gyoza richness with as much flawless precision as Michael Myers’ butcher knife in the Halloween franchise. It’s absolutely delightful. Upon every chomp of rice-enrobed salmon and pork-filled dumplings chased with these bubbles, my boyfriend and I looked at each other in pure disbelief, like protagonists in an episodic crime drama who realized *at the same time* that the homicide culprit was stinky Patrick from accounting all along. F*ck! Sorry for the abundance of murder in this tasting note, but it’s really because this pét-nat from Gilbert Cellars’ is straight-up killing it. Almost nectar-like, with a party parade of sour apple Jolly Ranchers, pineapple-y sherbet quench, and custardy key lime pie zestiness, it’s perfectly typecast for your nigiri-and-a-movie night. Might I suggest a horror thriller?
